By integrating insights from nutritionists, designers, and local stakeholders, this service design initiative creates culturally grounded strategies that empower pre-elderly residents to reduce sodium intake while preserving culinary heritage.

  • In Northeastern Thai cuisine, the essence of dining lies in bold, complex umami flavors traditionally achieved through sodium-rich fermented ingredients. This deeply ingrained culinary identity poses a significant challenge for pre-elderly residents facing rising rates of hypertension and kidney disease. The brief responds to the need for a balance between preserving vital cultural heritage and implementing essential nutritional changes. The project seeks to overcome deep-seated resistance to 'bland' healthy food by transforming abstract medical advice into a participatory design process. It aims to bridge the gap between clinical requirements and the cultural necessity of flavourful living.

  • The solution is the 'Nourish Collective' framework, a participatory system engaging designers, nutritionists, community leaders and pre-elderly residents. A pivotal landmark was the co-creation workshop, where designers acted as facilitators to translate clinical data into tangible 'Service Blueprints.' By overcoming community skepticism through hands-on prototyping, the project shifted from top-down instruction to a 'cultural-nudge' approach. Designers worked alongside local leaders to ensure the tools were intuitive and culturally resonant. The final outcome is an integrated community-led system that empowers residents to modify seasoning habits collectively, ensuring health interventions are both scientifically sound and aesthetically celebratory.

These tools replace abstract numbers with tangible cues, making sodium-monitoring an effortless part of the daily culinary ritual.- The 'Nua' Preservation Protocol: Instead of advocating for total sodium removal, the framework identifies ways to maintain the beloved 'Nua' (Umami) flavour profile using healthier alternatives discovered through community testing.- Scalable Service Blueprint: The end result is not a static object but a dynamic service blueprint.
